| Another leftover meal August 2007 |
| Last weekend I baked pork chops in a spicy tomato sauce served over pasta for guests. A leftover chop and a bit of pasta and sauce sat in the refrigerator all week. Last night I started some chopped onion browning in a pan, took out the pork chop and cut it into small pieces. When the onion started to wilt I added the pork, garlic, raisins, hot red pepper, Penzy's Vindaloo curry mix, and water to keep it moist, then covered and let it cook. After the rice was ready, I added some chopped carrots for color and a bit of texture, let it cook a bit, then dropped in slices of an apple banana just minutes before serving. Served with a plate of fresh avocado, olives, and sliced fresh tomatoes. It was a fine way to use up leftovers. |
