| Simple turkey stew November 2007 |

| You don't need to roast a big bird to get the taste of turkey. This is one of my easy meals for a day where I've got a little cooking time available. Start with a couple of relatively inexpensive turkey legs, browned along with chopped onion and a little garlic. Season with thyme and some (optional) hot peppers. Then I add some water, a little white wine, a touch of Penzey's turkey soup base if I have it, then cover and simmer until the turkey is starting to fall apart, adding liquid as necessary. Once the turkey is done, I add some potatoes and carrots, simmer another 20-25 minutes until those are cooked. Serve with a big salad of your choice. It takes a while but is very simple. -Ian Lind (www.iLind.net) |
