| Turkey stew A very simple recipe. Take a couple of turkey legs, which can be found pretty cheaply. Brown slightly and then simmer on low heat in chicken or turkey broth, perhaps with a little white wine. Penzeys Spices make a good turkey soup base that can be used to flavor the broth. Season to taste with thyme, garlic, hot peppers, etc. Let it go longer than seems necessary, 1-1/2 to 2 hours, so that the meat is starting to fall apart. Add baby carrots during the last 20-30 minutes. Potatoes cut into cubes can also be added at the same time. Nothing is too time sensitive. Thicken the gravy just before serving. We served with rice, peas, and a bottle of wine. It's a very simple and tasty meal. Ms. Kili (waiting on the chair in the background) agrees. |
